I made these Chewy Chocolate Raspberry Cookies from a recipe in Veganomicon for the first time as a birthday gift for my mom. She and I have been long-time fans of the chocolate-raspberry combination, going out of our way to get hot fudge sundaes with raspberry sherbert every summer. I followed the recipe almost verbatim and these turned out well. I did de-vegan them by using regular granulated sugar. I also used raspberry jam instead of the raspberry preserves that the recipe calls for, since I didn’t want seeds in them. They’re probably a bit less fattening than the cupcakes I might have made normally, and were certainly tasty.
